[EVENT] Dining Experience with Guest Chef Maurizio Bombini at The Ritz Carlton Pacific Place

October 27th, 2016. The Ritz-Carlton Jakarta, Pacific Place is set to bring an upscale dining experience on October 28th, 2016. This time, the hotel presents Maurizio Bombini, Italian Executive Chef who heads up Kubu Kitchen at Mandapa Reserve, one of Ubud’s premier dining destinations. Maurizio will be preparing a 5-course dinner in a unique dining experience in the Glasshouse. Before the event, Ritz-Carlton prepared a media luncheon for us, as a press conference.

The dinner will be prepared directly in front of guests with Chef interaction. The kitchen will be transformed into an Ubud garden to literally bring the sanctuary of Ubud to Jakarta. In addition to indulge taste buds, the event will be infused with an emotional touch – to leave guests with lasting memories.

Originating from Apulia region, in Southern Italy, Chef Maurizio learned his trade in the kitchen in his parent’s restaurant on the shores of the Adriatic Sea, where he began his journey of culinary adventures that has taken him to Italy, France, USA, China and Indonesia. Since October 2015 Maurizio take the role as Executive Chef of Mandapa a Ritz Carlton Reserve in Ubud Bali.

We were ushered to a private room in Pacific Restaurant. A long table were decorated with black table cloth and beautiful flowers. I think I was the only one blogger there. The rest of them are from media.

Price starts at 1.080K++ per person for a five-course dinner inclusive of wine pairing.

Welcome drink. Refreshing and very thirst-quenching. A good choice after hot day drive to Ritz-Carlton.

Chestnuts Espuma

Delicious chestnuts soup. Foamy and fluflfy. I didn’t know the ingredients. But I guess it’s really high quality with terrific style of cooking.  Great texture with perfect flavour. Addicting.

Tuna “Crudo”

Served with Primeur Caviar, Burrata Pugliese, Smoked Lettuce, Tomato Essence

Juicy and tender with a hint of crunchy. A lovely combination in this dish. I love the burrata pugliese! Enhanced the flavour of the dish. Definitely a keeper.

In Italian, crudo [ˈkruːdo] means “raw”. In Italian cuisine this word can be used with a lot of food: pesce crudo means “raw fish”, carne cruda means “raw meat”, similar to steak tartare.

Burrata is a fresh Italian cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains stracciatella and cream, giving it an unusual, soft texture. It is also defined by some sources as an outer shell of mozzarella filled with butter or a mixture of butter and sugar. It is usually served fresh and at room temperature. The word burrata means “buttered” in Italian.

Cod Ravioli

Served with Eggplant, Onion Cream, Smoked Ricotta

It was very appetizing. The cod ravioli was very well-seasoned. And I was in love with the broth. It was fresh and delightful. The texture of the cod was perfect.

Wagyu Beef Rib Eye

with Braised Tongue, Celeriac, Truffle Jus

First impression: the aroma of the truffle jus. Amazing! The Wagyu was tender and juicy. But for me, the star of the dis was the braised tongue instead of the wagyu. Melt-in-your-mouth!

“Live” TI-RA-MI-SU

Best tiramisu ever. Fluffy, foamy, tender, and definitely smooth and silky. The flavour was also perfect. I wanted to ask for another plate but I was too shy. Well, maybe later hahaha..
